every time I equip and unequip a weapon received on a recent quest, it erases one stored spell of the level it is supposed to add a spell slot for. can this be fixed?
AFAIK it can not. When you unequip the weapon the spellslot is no longer granted because the item is no longer equipped. So keep that in mind for the future.
Logging out and logging back in also strips any bonus spellslots granted by all items (as they are applied sometime after it checks how many spells/day you should have currently or something).
If you are a buffing character just use one of your buffs before you have to unequip your weapon or relog.

Understood, but each time I equip/unequip, the number of first level spells my sorc has stored goes down from 7 to 6 to 5 to 4 etc... I can remove all first level stored spells simply by equipping and un-equipping. So its not just the additional spell slot, but I'm losing one stored spell with each equip/unequip.

OK. Sadly, on unequip, it removes the slot from the uncast stored spells before the used slots, so the suggestion of using a buff before unequip doesn't work.
He'll just have to keep the sword sheathed until he needs it.

It will work, say if you get a lvl 1 spell slot, you must only have the last spell be the longest lasting buff, use that spell, and then take the sword off. But if you have two spells prepared that are the same, it will use the one before the very last added spellslot.
As a sorc though it won't work that way, though. It will just take away your slots. It's frustrating, but sadly nothing can be done about it.
I learned this the hard way a long time ago when sorcerer loot was very common. The best thing you can do is never use weapons or other things that need to be often unequipped that have spell slots.
