Right! I am back with sharks got not enough teeth suggestions! I think the following monsters should have see invisibility (or tremor sense?) because of their own characteristics:

Not sure why Shambling Mounds of Shroom Stumblers would have See Invis/Tremor Sense. They're just dumb overgrowth/fungus filled with earth magic. I'm not sure how to classify Mold creatures, but probably the same.

These are all distinct from Oozes, even if they possess some similarities and character models.

Is there some other characteristic I'm not thinking about here from which they should have Tremor Sense? AFAIK all plantlike/fungal creatures see and hear normally.

I don't even understand how it works beyond the whole "magic" explanation.  Though I think if something is rooted to one spot (brown mold, russet mold, etc) sure why not... can be explained by having "roots" feeling about the nearby ground.   Shambling Mounds with see invisibility/full stealth detection would just be ridiculous because of their special ability.

Just going to note here, stumblers are probably a poor idea, as they only threaten low lvl characters (specifically in one quest). Those PCs should have a chance to escape them if possible. More of an meta-critique, but worth keeping in mind.

They got no eyes. They must detect the foes by some sort of special ability. I find it dumb that russet spores would be fooled by invisibility or that a pile of magic earth like the shambling mound would be fooled either.

Shambling mounds are in fact a carnivorous plant, not an overgrowth filled with earth magic x3 they grow from the earth, naturally they should have connection to it. I think tremor sense makes sense. As to russet spores, they dont have eyes, and dont smell or anything, so i figure they would strike at what moves as opposed to what well.. what they simply cannot sense! Sharks.. they scent and see, rather than feel if im correct, strongly scent, so -maybe- at least should have see invis if anything , but definitely not tremor sense.

I think a lot of assumptions are being made.  Who is to say that in a fantasy setting a plant can't see without eyes or that it must somehow have other senses?  Why can't magical carnivorous plants have magical leaves that see? Does your houseplant feel you come in?  Does it see you?  Hear you?  How would you even know?

Honestly making an already incredibly volatile and difficult to survive in world even more randomly fatal doesn't seem appealing to me for some reason.

As a pure Rogue: Please no.

Stealth is already finicky enough.

I agree with all the mold monsters, if I'm not mistaken, one variety is just attacking your body heat.

Shambling mounds are evil, intelligent plants with low light vision, not even darkvision. "Their brains and sensory organs are located in their upper regions." They see more or less just like everybody else. From an OOC standpoint, they spawn mainly in the Shaggaland swamp from what I've seen, and I really don't think it's necessary to make that swamp more challenging than it already is. As it stands, a good scout helps navigate that swamp quite a bit. Give shambling mounds temorsense, and yea, not so much anymore.

I can see the stumblers having it from a makes-sense standpoint, but from an OOC standpoint, yea, you're just being mean to the lvl 3-4 rogues and rangers. Do we really need to be meaner to them? They have a hard enough time as it is, I think.

Some sentient NPCs could have ESP potions as well as seeing, though...
